Long Weekend Recap

I hope that everyone has had such a nice and relaxing Labor Day weekend!  Mine was less than eventful, but the time away from my desk and work was just what I needed to prepare for such a busy month!

Friday was a half day at work!  Wooohooo!  I did some cleaning and had dinner at home.  Then I treated myself to some wine to kick off the long weekend!  (And realized that I didn't have any wine glasses, so adding that to the ever-growing list of things I still need for my apartment.)

Saturday consisted of sleeping in and then heading to Knoxville!  I went shoe shopping (more on that tomorrow) and then drove to the airport to pick up my sweet boyfriend!  (I brought a whole stack of magazines, but I was so nervous/excited that I probably read like 30 pages of Southern Living in the whole two hours.)  The drive home was supposed to be under two hours, but we got stuck in the worst rain storm that I have ever experienced.  I genuinely thought we were going to die.  Thankfully, God was looking out for us, and we made it home safely!

Sunday was spent sleeping in.  I went to a potluck at my best friend from high school's house, and it was so nice to see my high school friends.  I hadn't seen some of them since I graduated almost six years ago!  

Monday was another lazy day.  I worked on my blog, but mostly just watching lots of Pretty Little Liars.  Around dinner time, I made some Three Bean Salad to snack on for the week.

If you're interested in making it, I layer a can of kidney beans, a can of garbanzo beans, and a can of wax beans.  In a separate container, I heat up half a bottle of Paul Newman's Vinegar + Olive Oil dressing, some sugar, and some salt for thirty seconds.  I pour a little into the container of beans, shake it up, and continue until the dressing is gone.  I refrigerate the Three Bean Salad, because I personally enjoy it much better chilled.

  1. I had friends and family in town this weekend so I was super busy. I am a little upset I didn't get to shop though because I heard the sales were fantastic.

  2. You're so lucky you got a half day at work on Friday!! But besides that, we had similar weekends! B & I went to dinner after work on Friday for pizza and a glass of wine and spent Monday watching PLL too!!

    1. I can't get overtime, and had to work over 4 hours earlier in the week for an event, so it just played out that way :)

      We are twinsies… or I guess triplets ;)
